Fennel seeds are known as Sounff or Variyali in India. Fennel seeds, which grow well in mild climates, are the oval, green or yellowish-brown, dried, aromatic, ripe fruits of an herbaceous plant called Foeniculum Vulgare, which is a member of the parsley family. The seeds obtained from spice and medicinal plants have a pleasant smell, are very aromatic and have a pungent taste. Fennel is a common Asian, European, Italian and Mediterranean dish. In India, fennel is often used in meat and fish dishes as well as in marinades and vinegars due to its distinctive taste.
